Cheesy Potato Soup

Ingredients:

  • 1 T. Olive oil

  • 2 cloves of garlic (more if you like garlicy soup)

  • 2 cups broth or water

  • 3-4 pounds of potatoes

  • 1 cup diced, precooked bacon, ham or sausage

  • 4 oz shredded cheddar cheese

  • 2 cups milk

  • Extra cheddar cheese and crackers for serving

Directions:

  • Add olive oil to a large stock pot, heat and sauté diced garlic (careful not to burn it).

  • Add two cups of broth or water and bring to a boil.

  • While you are heating the broth, peel and dice your potatoes. Dice them small to speed up cooking time, or larger for chunky soup.

  • Add diced potatoes and bring back to a boil. If needed, add more water or both to cover the potatoes. Boil until they start to soften. 20-25 min.

  • Add precooked meat if desired.

  • Once the potatoes are soft, reduce heat and add milk and cheddar cheese. Allow everything to melt.

  • Serve with more cheese and crackers.
