Salt and Vinegar Home Fries

I love potatoes and I love Salt and Vinegar potato chips. So a few years ago Steve made these salt and vinegar home fries for me and we’ve been enjoying them ever since!

Think of the flavor of salt and vinegar chips, but the healthy option of baked home fries that leave out all the ‘junk.’ Enjoy these with your next burger night or with a yummy grass fed steak!

Ingredients:

2.5 pounds potatoes

2 cups white vinegar

Water

Olive oil

Directions:

Preheat your oven to 450 F.

Wash and slice your potatoes into wedges.

Add 2 cups of vinegar and the potatoes to a medium stockpot. Top with water just until the potatoes are covered.

Boil until tender, but not falling apart. About 20min.

Drain and pat dry on a towel.

Place the potatoes back into the pot, or a large bowl and coat them with a tablespoon or two of olive oil.

Line a large baking sheet with parchment paper.

Spread potatoes out on the baking sheet. Salt the wedges.

Place into oven and bake for 20min or until golden brown. Finish with the oven on broil for extra crispy home fries.
